What is Goetta?

Goetta (pronounced “get-uh”) is more than just a breakfast food — it’s a flavorful Cincinnati tradition rooted in German heritage. Originally brought to the region by German immigrants, Goetta was created as a way to stretch meat by mixing it with hearty grains and spices. The result is a savory, satisfying dish that’s stood the test of time and earned a devoted following.

At its core, Goetta is a unique blend of ground pork and beef, combined with whole grain steel-cut oats, fresh onions, and a special mix of spices. This mixture is slow-cooked in small batches to develop rich, meaty flavors and a hearty texture. Once chilled and sliced, Goetta is best enjoyed pan-fried until crispy and golden brown on the outside, while remaining tender on the inside.

Whether served with eggs and toast, stuffed in a burrito, layered on a burger, or turned into wildly creative dishes like Goetta mac & cheese or Goetta donut sandwiches, there’s no wrong way to enjoy it.

Glier’s Goetta, based in Covington, Kentucky, has been crafting this regional favorite since 1946 and is now the largest producer of Goetta in the world — making over two million pounds each year.
